Black bean quinoa burger with pineapple avocado slaw

This is one of my favorites by far!  I found myself on Sunday afternoon with minimal groceries in the fridge.  We are starting a new CSA tomorrow so I'm waiting on those lovely ingredients to arrive tomorrow.  I turned to my Pinterest account and saw a pin for black bream burgers.  I didn't have all of the ingredients so I winged it.  So happy with what I came up with!  

These patties work best if they are prepared ahead of time so that they can solidify.  I froze the extras and they will be an easy go to lunch in the future.

Black Bean Burger Ingredients
-1 can of black beans, rinsed and drained
-1/2 cup of cooked quinoa 
-1/2 of a red onion, peeled and chopped
-1 chipotle pepper
-1/2 cup of frozen(or fresh) corn
-1 Tbsp of cumin
-1/2 cup of rolled oats
-1/4 cup of whole wheat flour
-1 cup of salsa

Pineapple Avocado Slaw Ingredients 

-1 ripe avocado
- 2 heaping spoonfuls of crushed pineapple (in pineapple juice)
- 1/2 cup of red cabbage

Now I was a bad blogger and didn't document my steps, mostly because I was making it up as I went.

1) Comebine all ingredients in a food processor.   I added mine piece by piece as I had them ready and blended in between

2) Put the black bean mixture into a dish and refrigerate for a few hours- I left mine in over night

3) Form 6 patties and place on a greased cookie sheet. This can get pretty messy- the less you handle the mixture the better!

4) Cook at 400 degrees for 12 minutes. Flip and cook for an additional 12 minutes.

While my patties where baking, I made the slaw in my Magic Bullet.

1) Blend the cabbage in small short bursts. You don't want it to liquefy.  Instead you want it very finely chopped.  Place cabbage in a bowl.

2) Blend avocado and pineapple.  You may have to stop a few times and shake the bullet so that all of the avocado gets blended.  Add the avocado mixture to the bowl.

3) Using a spoon, stir the avocado and cabbage together.  Refrigerate until the patties are ready.



One the patties are cooked, top each patty with the slaw and a spoonful of salsa.  We ate them without a bun but that is always an option!  Maybe try adding sprouts and shredded cheese as an additional topping?
